Yesterday was a happy day….GROCERY DELIVERY day! I honestly felt like the happiest girl in England. Doesn’t take much, right? 🙂 I found it so much easier to be able to see what I was purchasing online, rather than go into the grocery store. Shockingly, their grocery stores are quite a bit different than in the States. I used Ocado’s delivery service, and it was great!
Here are a couple of easy recipes that I thought were worth sharing.
Buffalo Chicken Salad
Ingredients:
- 1 cup rotisserie chicken, shredded
- 1 Tbsp Greek Yogurt
- 1 Tbsp Frank’s Buffalo (or Hot) Sauce
- 1/4 tsp garlic powder
- Spinach
- Toppings: diced cherry tomatoes, chopped red onion, avocado, hemp seeds
Directions
- Mix rotisserie chicken, Greek Yogurt, Frank’s, and garlic powder in a separate bowl
- Add spinach and toppings to salad bowl
- Top with buffalo chicken and cracked pepper
Bell Pepper Tacos
Ingredients:
- 4 Bell Peppers
- 1 lb. Lean Ground
- Cumin, Paprika, Garlic Powder (1/2 tsp of each)
- 1 cup shredded cheese
- Toppings: cilantro, avocado, cherry tomatoes, red onion, diced jalapeños, greek yogurt, salsa
Directions
- Preheat oven to 400 degrees Fahrenheit
- While oven preheats, add ground beef to pan on the stove over medium heat. Add cumin, paprika, and garlic powder–mix well. Cook until beef is browned.
- Slice each bell pepper in half and remove tops, seeds, etc.
- Lay peppers on foil lined baking sheet and cook for 10 minutes
- Remove peppers from oven and fill with ground beef mixture. Top the peppers off with cheese and return the pan to the oven to cook for an additional 10 minutes–or until cheese is completely melted.
- Add your favorite toppings and enjoy!
